The muffin for tea-lovers

Ingredients:  

  • Butter and flour, for baking pan
  • 150 g butter
  • 100 g brown sugar
  • 2 eggs
  • 150 g flour
  • 50 ground almonds
  • 1/2 tspbaking powder
  • 20 g Matcha
  • 2 – 3 tbsp cream
  • 12 tbsp chockberry jam

Preparation:

  • Pre-heat the oven up to 180 °C (circulating air). Grease a standard 12-cup muffin tin (or line with paper liners).
  • Whisk the butter and sugar until well-combined and light-colored. Add the eggs one at a time.
  • Mix flour, almonds, baking powder and Matcha. Put everything in the butter mixture and stir. You can add a little bit of cream if you want to. Then put half of the dough in the muffin tin.
  • In the middle of each muffin put a tea spoon of chokeberry jam and cover with the rest of the dough.
  • Bake for approx. 25 minutes until golden brown. Put the muffin tin out of the oven, leave to cool and enjoy.
